Three things that catch hotels out
Lead time comes first. Allow two to four weeks for a branded run, and longer if a custom mould is involved, so seasonal amenities need to be ordered well before the season starts. Storage is second: chocolate needs a cool, dry, odour-free space, because it readily absorbs smells from everything around it. Allergens are third. If you serve nut-containing pieces, housekeeping and food and beverage both need to know, and labelling has to be correct.
